Brake fluid is hygroscopic (will absorb water), which will lower it's boiling point and decrease its hydraulic efficacy. Same reason brake fluid needs to be replaced periodically.

Water gets into brake lines thru condensation. Thus lowing the fluid's boil point and rusting the lines from the inside out.

Edit: As someone said above brake fluid is hygroscopic and attracts water.

Probably is obvious, but brake fluid does this thing where it likes to absorb water and rust out your brake lines from the inside. Is very bad thing. Keep brake fluid dry.
