Now that I actually have a full salary job since graduating from WVU in December, I am starting to think of possible project cars. Now, I wouldn't act on this impulse right away, since I have no garage. Here are some thoughts on what I think would be pretty awesome cars to tinker with. Let me know your thought, concerns, and any pertinent info I should know if I were to scoop up one of these cars in the future.
BMW 6 Series (E24) Long Distance Cruiser
Take a tired old 635, lower it just a bit, gut the rear seat, sort out the performance to around the 300-350 hp area and cruise the country. Something like this:

Chevy Corvette C5
Either a coupe or a targa, with a manual. Don't know what I would prep the Vette for, but I have always wanted a inexpesive, fast, American V8 to hoon around. Maybe strap a supercharger on, and burn tires like there is no tomorrow. But my licence could be at risk since I have a tend to have a lead foot.
Saab 9-2x Aero (Saabaru)
Put snow tires on, bolt on some WRX goodies and winter autocross the hell of it. There are a couple under $10,000 (but high mileage) within my area, and this maybe the immediate leader in the clubhouse. All the reliability of Subaru, with the great looks of Saab, a win-win all around. Look at this, this looks like a damn good time:

Acura TSX (My DD)
Am I crazy to make my TSX into a project car? Probably, but the idea has crossed my mind a couple times. I wouldn't go super-JDMbro-crazy with it, but tastefully mod it to keep the reliability.
Offroad/Snow Truck/SUV
A snow vehicle would be cool. An old Land Cruiser, second gen 4Runner, or a Dodge Ram would be my targets. Put a push bar with a winch, bigger tires, and go off road or survive the Connecticut snow. Sounds good to me.
TL:DR: Considering a project, tell me what could go wrong, and what to look for.

if you want to get a project that wont cost you too much if you fuck it up, look for an old, none running motorcycle. they are cheaper to buy, easy to work on, and dont really require much in the way of space or tools

My heart would say 6-er, preferably with some badass yellow fogs thrown on! My head would say do not use your DD as a project car, it'll soon get frustrating when anything goes wrong. My penis says off-roader, it also says become poor and buy a Land Rover.

2000 V70R. M66 Manual swap it and have a bulletproof DD/fun car. Or buy an 04-07 V70R and have all the fun with none of the upfront cost... It will cost around 3k every 12k miles though.

Get the E24. My friend's dad has one with a Turbonetics kit and a Dinan ECU. That thing's a monster.

That would have been cool. Unfortunately she hasn't seen Motown since November. I was trying to keep my eye open for a TSX like yours but never spotted one.

Of your listed options, I'd either do the e24 or an off-road/snow vehicle (the latter simply because I live in Erie, and we get a fresh foot of snow every few days). If it was strictly a for-fun sort of deal, the e24 for sure. They're fantastic cars.
