I’ve been told I can just plop videos in, but this doesn’t work for me, since it just comes up as a link. what the hell am I doing wrong?

What browser are you using, and do you have something like noscript installed? It may just be messing with it.

I cannot post pictures or videos from IE. Pictures gives me a ‘image upload error’ and youtube attempts to embed but eventually turns into a link. Used to be able to get around that using the html editor, but that went away, and for the last month or two all the editing functions (bold, italics, etc.) stopped functioning.

No (well, other than standard Kinja wonkiness) on any of the other browsers. I just think they're not supporting IE.

I’ve had no problems so far.
