I miss the stairs we had when my family lived in El Puerto de Santa Maria. The treads were wood, and floated off a center spine to the staircase. No handrail on them though. Similar to those pictured.

That’s one way (and the most common now) to do it, but back in the day before phenolic glues, it was all about the skills using solid pieces of wood.
I’m a modern type person, now. I really do not leave the house without a load of Titebond III on hand. I just don’t.

Woah. Was the wood wet? I’d wonder if they wet down the boards to make it easier to warp.
Otherwise that is some serious clamping...
As a sidenote and Engineer...I LOVE spiral staircases.
