Your correspondent was surprised to encounter an XL1 in the wild and further surprised to find that it was a real one, not a demo model.
A little difficult to fold yourself into but once ensconced it's comfortable enough even for those of us over 6 ft.

You can't but I know anyway - it's to maximise shoulder room. The car is so narrow that if both occupants sat side by side they would be cramped.

Honestly VW needs to shoehorn a V10 TDI in there, give it some wider tires and then break all the mileage and distance records for hypercars. Piech, do your thing.

As said more shoulder room, but it is to make the car as narrow as possible in order to reduce the Drag Coefficient. By narrowing the car the frontal area is reduced allowing for less air resistance on the vehicle thus increasing fuel economy. I studied the XL1 and it's aerodynamic features for my final year dissertation.

Top tip: the inside door lever is on the sill, not the door. Having closed the door above me I was concerned that I might have to summon help to get out of a car I wasn't really supposed to be in.
