We are also the Lowrider capital of the country. Have a lowrider.
The Chile season is upon us in the Southwest. A time to replenish our stock of roasted green chiles for the coming cooking year. (Red Chiles do not require roasting, they are dried and cooked when needed).
Roasting under high heat locks in the flavor and partially cooks the chile and also chars the skin for that unique, smoky flavor that can only come from that process.
Green chiles are available in many different heat levels and the wuss levels do not even deserve a mention. Personally, I like my chiles to be about a 9 of 10 and have a good smokey flavor. That is why I only buy local. So I can taste them before I buy them and watch how they are roasted.
The best come from the Hatch Valley in southern New Mexico. They are available most everywhere for about 3-4 weeks.
A Wal-Mart roasting Chiles. Yes, everywhere here roasts chiles.
Like your local Mexican Restaurant? Good chance those chiles came from New Mexico.
And of course, our fall/winter special. Green chile stew.
Why does the DD spell chiles with an E instead of an I? It is the law in this state that all local chiles be spelled in the old way to differentiate them from foreign competitors.

I lived in SE New Mexico for 3 1/2 years. Damn I miss being able to get green chili everything.

God I miss this.
I used to live in an area that was ~30% mexican, 69% white, and 1% "other". Then I moved to Chicago.
I really miss being able to buy decent chili, burritos, etc. Taco Bell is most people's idea of 'southwest' food. If I want to eat it, I have to make it myself.
So your post just reignited that craving.

I just picked these a few days ago. The Jalapenos are the hottest jalapenos I have ever eaten. Quite happy with my peppers.

I love green chile so so so much! We ordered some from New Mexico Catalog and they roasted and froze 10 lbs organic green chiles for us and shipped them to KS! Really the only chiles we see here are stupid canned ones.

Enjoy. Tonight I am making green chile cheeseburgers. Dice some and put in the burger. Then whole chiles laid over the top with your choice of condiments.

Awesome I used to do that with red onion but never thought of using green. I will have to grill this week and try it.
