ones a screw and the other is a bolt but can also be screwed with a screw driver.

I can give you the rundown, not sure how much small motor stuff ill need to do, but more memberships is more cool. Either way; Im just trying to get a handle on carbs again and I can't find any good info on these Kei * Hin carbs (Mercury mariner outboard). Someone told me once they are honda carbs (and its got a yamaha stamp on the block. HA!).
check my logic please:
Big brass screw is the idle/low speed jet access
Small brass screw is the high speed jet access
Also, what are these?
They look like Jets (not adjustable)
I think my high speed jet on my lower carb is clogged and I was going to dissasemble the intake to get at it but since this motor is an 85 japanese outboard gettings gaskets for it is...um...difficult so Im wondering if I can use cut your own gasket or sealant or both in reassmebly.

I think a KeiHin is derived from a Solex, so to answer your question, yes: those in the second pic are jets. However, they're not fuel jets, they're air jets - to strategically apply air to a venturi to suck out/pressurize specific volumes of fuel. This is exactly as insane as it sounds, but unless you've been feeding your engine dirt, they will not clog.
Your logic on the purpose of the things in the first pic: also yes, I think. Also something you see on a Solex - typically only one adjustable jet, all others permanently sized for the engine.
Yes, you can cut your own gaskets. Standard gasket paper should work fine, but I suspect you're not cool like me with your own gasket hole punches, so doing the holes will be a pain. A set of leather punches will work if you know somebody with any.
Funny enough, these carb questions would be answerable as well or better by a VW mechanic as by a two-stroke one, because insane Solex.

I've had a bitch of a time getting these things to run right. They were re-jetting to high elevation when it was new but they sputter and cough at idle and are pretty gutless low down for a 55 hp motor.

Solex-style carbs can be very flakey at high elevation due to dependence on air pressure differences. Some 60s model Solexes, no lie, had an external high altitude compensator that you could install and adjust - recommended for I want to say over 5000 ft.
