I work for an Insurance brokerage company, I'm the IT guy, the everything guy.
We have 8 offices and about 100 people total. We are finishing up our merger, and we are now one of the biggest brokers in quebec. now in the top 5 I believe.

We could .. There shouldn't be any problems with that at all. We price as well as replace the items that were lost by the insured. By working with Major companies like Best Buy , B&H photo , Snap On we get discounts at all these companies and then split them with the insurance company while doing the work on the claim. So the insurance walks away with a completed claim and saves money while the insured gets all brand new items we make our margins and the big box stores (Best Buy) stay get more work too.

Well when looking for a insurance company you want the one that doesn't care how fast the claims done or how much they save you want a insurance company that cares about the claim being done correctly.
I recommend Auto Owners . We work with Farm Bureau , Liberty Mutual , Auto Owners , Farmers etc. Farmers at our company has a bad wrap for being cheap skates that nit pick claims to death until they are paying the least amount possible this usually means they take short cuts where they can. When looking at a Snap On 3/4" ratchet , Farmers may price a Craftsman instead and see if they get away with it while Auto Owners would price exactly what you had .
another Pro tip would be to be sure without any doubt you have RCV insurance or Replacement Cost. This means we could replace your items with brand new ones otherwise your only due the depreciated amount per item.

Hmm. If that's the case I'd try to get with a Farm Bureau they seem to be the easiest to work with and don't always care about perfection. This can kinda be a blessing or a curse. As you may have a adjuster approve something they shouldn't or maybe they don't approve something they should. Again Farmers has a bad wrap at our company so it's difficult to tell you stay put.
