Is there something I'm missing when it comes to alternatives? Anyone shopped and bought (or didn't) lately? Why or why not? Feedback is greatly appreciated. Lamborghini for your time.

Meh, blind fanboyism doesn't help. Canon and Nikon is like Ferrari and Lamborghini. Mercedes and BMW. Toyota and Honda. Go use both at a store and see which one you find easier to use.

I'm flexible in my requirements. Around this price range. Kinda just throwing it out there at this point.
What I found appealing was the weather proofing and functions that come with it being a newish model.

Also, I'll grab a kit, but am curious about lenses in the future. Don't want to get pigeon-holed into cost or lack of choice.

I currently use a 70D kit with 18-55 IS STM and 55-250 IS III and bought a 50mm 1.8. Best combo the 70D and 1.8 Sharp-ass pictures. The video autofocus is so fast you don't even notice it's a camera LCD. BUY IT. You won't regret it. Superbly balanced camera. Built in wifi makes it sick with my iPad/phone for tricky shots.

Seems like a good choice. With SLR, you choose your lenses first (even you aren't buying them) then buy a body. Lenses last, bodies change.

Better sensors. Which means better dynamic range and images. Also the lenses between canon and Nikon are a toss up really. People will say knesbetter than the other. But if anything Nikon might edge them out purely based on autofocus accuracy. Other than that the glass is equal. I have a d7000. I'd go with a 7100. The newer version. Or a 5000 series if you want something cheaper.

Canons generally have more/cheaper lenses/more user friendly. I used a Nikon 5100/5200 for a while too. I hear the 5300 is excellent. I used an older D90 for a while, too. All great cameras. What won me over was the dual-pixel autofocus, wifi, weatherproofing, and touchy-screen. The 70d is just...fast. It's always ready to take the shots you need it too...some other cameras I used got stuck processing or didn't turn on fast enough. The controls and system are based off of the 60d, its predecessor. This is truly a poor-man's Pro camera. You get the same shots you would if you bought a 7D, without the absurd cost or weight. However the 7D can be frozen in a block of ice and still works. But the sensor in the 70d = unmatched.
Buy the 50mm 1.8 too...$100 even at best buy.

I prefer Nikon. Had a D90 and a D7000 and I think they are years better cameras from a UX perspective.
Cheap lenses, Canon wins. Their 18-55mm as an example focuses faster, Nikon is more accurate IMO, but slower. The difference in accuracy is small, but the speed difference is certainly noticeable. Start buying better glass though and the differences get smaller and smaller and it comes down to the cameras, and this is where I think Nikon shines. Better color (subjective) and better DR.

I'm still weighing everything, and have a long way to go. It's just a matter of if the benefits of the Nikon will be seen in how I intend to use the camera. Still not sure. I do love quality though...
It may seem like a silly requisite, but I'm really drawn to the weather proofing on the Canon. I live in a rain forest you see. Not sure a wet buggered Nikon would be better than a functional Canon. :-)x

The d7000 / 7100 are semi weather proofed... Actually weather resistant is the phrase.
But if that is one of your primary concerns: If you want a water resistant camera you need a lens that allows this too.
