"Quattro Formaggi" means "Four Cheeses", literally. It's the name of a much favored Italian pizza topped with four different cheeses (Emmenthal, Fontina, Provola and Gorgonzola - the best blue cheese in the world), that you should spray with grinded green pepper and match to a dry red wine. In this case, the Restaurant owner used this name for a personal dish of him made of "Pecorino Romano" (1st cheese), "Mozzarella" (2nd cheese), "Fontina" (3rd cheese) and good, American goat cheese (would you believe this? ...it's the 4th cheese!). All these cheeses served with sundried tomatoes and a drop of olive oil: sounds like a good, light appetizer.
Here is a picture of an Italian "Pizza ai Quattro Formaggi". Hope this helps. And it's not a German dish. Not at all. Nope. Niet. Nicht. Nada. No. " Manco p'o Cazzo ".

Oh, that! Well, at least it's misspelled: it's a vegetable, and the original Italian name is "
Cime di Rapa
". Sometimes it's also called "Cime di Rape" ("rape" is plural of "rapa"... nothing to do with a vicious, sexual attack). The "cime di rape" (my mom called it in this way too) is a very delicate and butter flavored vegetable and it's mainly used in the region of Puglia, as a condiment for the wonderful, local pasta "Orecchiette". "Orecchiette alle Cime di Rape" is to die for... really. True story. Here is a picture of a dish of Orecchiette Pugliesi with Cime di Rape: ...

Learn something new every day! I'd seen it with a b vs. a p (rabe) and an a vs. an e (rapa) but never with both. But hey, being of Polish ancestry means a) I have an excuse to be an ignoramus and b) I am too busy trying to rid the world of people who say "pierogies"

Germans stole our word because "Audi Vier" sounds lame, while "Audi Quattro" makes you think of speed, roaring engines, prancing stallions, sun, sea, nice women and good food. Sorry if we are the best.
