...but I thought I'd get an idea now. Poll on what I should get as my next project :)
Option 1: MGB GT V8 Widebody. 3.5l or 3.9l injected Rover V8, Jag IRS and Sebring arches, 220+bhp and 1100kg.
Dirt cheap price of entry and loads of cars for sale, engines out the wazoo and loads of documentation on every part of the build. Plus, !!!error: Indecipherable SUB-paragraph formatting!!! .
Option 2: Alfa GTV6 3.0l. 3.0l from a 75, breathed on until it makes north of 200bhp, exhaust butterfly so it sounds !!!error: Indecipherable SUB-paragraph formatting!!! at the press of a button, maybe a bigger bore 3.3l or 3.5l if funds stretch to it. 210-250bhp and ~1200kg.
I really want a transaxle Alfa, and it'd improve the British:Italian ration of my fleet. However, there's few GTV6 for sale and they tend to be on the expensive side when they do pop up now. !!!error: Indecipherable SUB-paragraph formatting!!!
Option 3: Jaguar XJS V12 Lightweight. Early pre-HE V12 stripped down to the weight of an E46 M3 with the pipes opened up to release about 350bhp and let out a little of !!!error: Indecipherable SUB-paragraph formatting!!! . 5-speed swap too :)
Expensive to run and maintain, but everyone should own a V12 once in their life. Oh, and !!!error: Indecipherable SUB-paragraph formatting!!! !
Option 4: Maserati Biturbo. Early car with all the goodies from a late one: 2.8l 250bhp V6TT, torsen LSD rear, working electronics, the lot :) 250bhp and ~1200kg
I can use the 228 as a donor if it proves irreparable and I should really put mu money where my mouth is when defending the reliability of later Biturbos. Plus, E30 M3 EvoII-beating performance :) very hard to find for sale though
Option 5: Rover SD1/P6. 3.5l or 3.9l injected RV8 again, same 220+bhp but in a British Bruiser shell. Might go bigger displacement than that, anything up to a 5.0l TVR engine and 350+bhp.
Because Daytona-lookalike !!!error: Indecipherable SUB-paragraph formatting!!! and because spaceship-lookalike !!!error: Indecipherable SUB-paragraph formatting!!! . Also V8 :)
Option 6: Triumph Toledo Sprint. Take the lightweight 2-door Toledo 1300, add in the 127bhp (easily tuned to 160-180bhp) 16v Sprint engine and the STA rear from a Mk1 Triumph 2000 (same track width). ~170bhp and ~800kg.
Triumph 2002/2000 GTV rival, plus the !!!error: Indecipherable SUB-paragraph formatting!!! I've ever heard :) like the above picture, but with the quad Dolly Sprint headlights
Option 7: Triumph GT6 Sprint (or should that be GT4 Sprint?). Triumph GT6 Mk2 rolling chassis with the aforementioned 2.0l Sprint I4. ~170bhp and 770kg.
Lighter than the 2.0l I6, more powerful than the 2.0l I6, something out of the ordinary and I already know my way around the chassis. Plus, I've roughly approximated the weight distribution to be 45% front, so it's basically a 911 :)
So, which one do you reckon?

Options 1 and 5 look suspiciously familiar, 1 remarkably so. Thus, I must vote lightweight V12, because contrary. Despite how much I approve of option 1.

P1800 or Jensen Interceptor? Those are all excellent choices. 280Z with LS1 swap?

I've only ever seen one MGB GT V8 in my life (because America), and it was glorious. So my vote goes first to the MG.
Second choice is the Alfa because I am apparently an Alfa fan boy.
Third would be the biturbo. I think they are awesome, and I think they are a pain in the ass.
Finally, if all else fails, the Jag, because, as you said, V12.
My only other thought would be, since you are in Europe, where awesome cars exist, why not Shamal or Ghibli (II)? (I honestly have no clue on how rare or price point is for these but if I could get my hands on one of either I would in a heart beat. and yes, I know the Shamal is more rare and expensive than the Ghibli.)

A Jensen Interceptor would be just excellent :)
I do like S30 Z cars, but they're ludicrously expensive over here. Think £10k for a rust-bucket, and £20k for a decent one. They got panned by the press here and hardly sold any (partly due to softer suspension ruining the handling and partly due to higher pricing encountering stiffer opposition).
Also, I'm opposed to most LS-swaps as a rule. I won't disrespect someone else's choice to do it, but it's not something I'd do myself. A 3.1l stroker on ITBs would be more up my street :)

I would sell my grandma for a Ghibli II, but your suspicious are right regards their rarity and price-point. The cheapest I can find is £13,000 and most are between £25,000 and £35,000. Something that 2 years' salary would only just cover.
I'm also picky and want one in RHD, which makes finding them for sale very tricky.

Tell me about it. I keep drifting towards the SD1 but as soon as I see a head-on P6 I snap back again :)
The suspension on them is weird enough to thoroughly catch my attention as well. DeDion rear and bellcrank-operated springs on the front on a Rover ? Sign me up :)

I think there's a bit of a price-disparity between the UK and the US on these though. They command a bit of a premium over here. After looking at eBay, not as much as I'd thought though. They're under £10,000. Maybe an option then...

Those little Sprites can be made into right monsters :) the old A-Series isn't the meatiest mill, but you can get them to produce good power for their size and weight
