They're fairly clean, and uncluttered, the designs are a bit odd, to be honest.

While I think shaved bays are a waste of time, I appreciate the time that people put into them.
Amazing work.
I mean, where the hell is the master cylinder and booster? Clutch and brake reservoir? Coolant and washer reservoir? Coolant lines? ALL THE GODDAMN WIRES????

Impracticality to the MAX!
All that stuff that is not visible has to be taking away precious space from the interior, underside and wheel wells, there are several reasons why they go IN the engine bay.
"Uhm, looks like wiper fluid is low, better jack up the car!" Derp.
It looks super tidy, but in my mind it's miles more disorganized than having everything in one place and way impractical.

I absolutely love this one
And this makes me smile
I love shaved bays, but I would rather everything be there, accessible, and clean. I will eventually tuck my MR2, but I will be retaining everything and not hacking it to peices. The braided hoses are sweet though, and the mil-spec wiring (rywire does amazing work, its seriously worth the time to look at, and I'm not by any means a Honda guy) and connectors are amazing.
