Just had my annual review at work. Was told I was quickly becoming the most influential director in the company, of the most important department! I was up for 4 hours in the middle of the night sweating it, for no reason. Have a kick ass Lancia for my kick ass day!

I thought pork was supposed to be well-cooked because of trickynosis (or something like that).
Also, would have replied sooner, but everything everywhere was completely borked.

The trichinae are killed at 137 degrees, so 145 medium rare is safe. Plus it is not as prevalent as back in the days where the idea you have to destroy your pork by overcooking came about
