When I sell my car (hopefully soon since I'll be dropping the price again in the new year), and when that happens I'll have about 2700 dollars to buy something else.
The things my new car needs to be.
1. Something new to me. which rules out Hondas
2. Not a coupe, unless it is a muscle car or a pre 71 Beetle
3. be RWD
4. be fun
I know these rules are a little silly, but I've always made the "since-able choice" when it comes so cars(sorta). Which is what had lead me to owning a sea of Hondas, and a few Toyotas. I want something that puts obvious logic aside and lets me steer with the throttle, at least on snow.
So I'm sure I'm not the only one that has noticed, but E36s are getting hella cheap, like under 1500 bucks cheap. Also my wife would like it if my new car had at least 4 doors. So I'm seriously considering buying a beater E36 4door, and fixing it up/ modifying it with the other 1700 dollars I'll have just laying around, and yes I realized it would constantly be pouring money in it, but I'm paying 300 bucks a month on my Civic so what's the difference?

The other contender is something less "practical" but more awesome. A late 70's Muscle car. Something that doesn't really have a following, isn't really "on the radar", and hasn't skyrocketed in value. Specifically a Volare Duster.

That drifting E36 is probably the only one in England. Seriously they have become so rare that they are cheaper across the board including the M3. There are a lot of E46 M3s for around £5000 but the cheapest E36 M3 Coupe I've seen is £7000. What a world we live in.

Well the same thing has happened here with the E30. If you want a decent E30 you'll pay more for it than you would for an E36.

Cars like that are super rare here in the upper midwest. I think either Japanese cars took longer to catch on here, or they all rusted away. But seriously it's easier to find a 240z, than it is a KE70 Corolla.

1. If all you have to spend on a car is $2700, you should save up another $1000 at least. Sorry, but you'll be much happier with a $4000 car than a $2500 car. The reliability and availability difference is night and day.
2. When it comes to cost of repair, reliability, and availability of parts, a muscle car is way more practical than an E36.
3. 4-door muscle cars are about the only options you have.
So, without further ado,
1. Ford Crown Vic (P71 if you can). Probably the most reliable, but least fun, and most practical choice.
2. 1961-1979 Ford F-Series w/302, 390, or 300 I6 (the 300 I6 is the smart choice, the 390 is the fun choice, the 302 is probably the cheap choice). Potentially less reliable, but probably the best deal in terms of wanting to own it for a long time, being able to flip the cars, work on them, etc. Hell, you could just work on the motor alone on a 302 or 390, and then swap it into a muscle car later on when you can afford something better.
While the Truck isn't fun in a sporty sense, it is massively fun in terms of what you can do with it. It's a great way to learn how to build an engine, and muscle trucks are fucking badass if you do it right.
And for the more sporty choice,
I know you said no coupes, but... the 280ZX 2+2 is an incredibly reliable car that works great in snow . Ask me how I know. They're dead-simple, dirt cheap, and quite modern (4-wheel disc brakes) and will run 200,000 miles no problem.
Nissan 510 Wagon. Basically a 4-cylinder, 4 door version of the 240Z, but with a live rear axle instead of IRS.

The shop doing the motor swap on my Magnum runs several E36 and newer BMW race cars, along with specializing in them.
They're fantastic cars, very well balanced and they have a massive aftermarket community that can take care of literally everything on the car. More advanced repairs like head gasket or cylinder jobs are ridiculously complicated, but basic troubleshooting and parts are not so much.
E36's are growing on me, and I swear, a year ago I wouldn't have wanted anything to do with them. You just need to be introduced to the right car.
You could alternatively look for an A4, but good luck finding something like that under $10k. I tried, and bought a Magnum RT instead.

two friends of mine with late 90's A4s(2.8l quattros) have scared me away from them. It's just one thing after the other with their cars. But they do both that over 160k on them
