.. to do some exhaust work on my car, when I found this in a customer gallery. It looks eerily similar to another corvette floating around on the internet. But the workmanship looks good!

I understand that those are valves, but are they pass-throughs that straight shot the exhaust past the baffles in the mufflers? (It's the only thing I can think of that makes sense for them to exist. I just haven't seen it through the mufflers before.)

Yes. When you reach a certain RPM or throttle opening (can't remember which) they open and bypass the baffles.
It's called the NPP muffler and it was offered on C6 and C7 corvettes.
This dude explains it pretty good.
