Christmas week activity: leave the mid-west and follow the Mississippi south to the Gulf, then cut a hard left and chase the coast down to Key West.
It's going to be 2,800 miles round trip.
What do I need to see along the way?

I'm pretty sure if you turn right while heading south you go west.

Well, if you happen to go through Mobile at lunch time or supper time, Ed's has great seafood. If you are a Top Gear fan, the spot where they paint each others cars in Florida is about 3-5 miles off of I10. Not much to see, but since I live 10 minutes from it, I've seen it. The town it's in is a neat little town, also just north of that(maybe a 3 minute drive) in Milton is the Milton Bakery, which has amazing donuts, especially the sour cream doughnuts(they are like a smooth, melt in you mouth, sweeter glazed doughnut). There are a few neat little towns along the way, pretty close to the interstate. There is Ponce de Leon springs, which is pretty neat.

Florabama! Naval Aviation Museum if you like planes, they have everything we fly and flew except for the blackbird. If you are figuring a place to stay Pensacola, Gulf Shores is going to be less expensive than New Orleans, and about 3 hours away. You can hit NOLA explore eat be happy. Drive three hours, see Florabama stay at a cheaper place then see the Museum before getting on the road.

Don't even lie, you know "People Watching in Florida" should be a sport, or at the very least a reality show.

Hey! You'll be coming through my neck of the woods! If you're into military stuff(especially planes) check out the Naval Air Museum in Pensacola or the Air Force Armament Museum in Fort Walton Beach. The Armament Museum has a Blackbird you can actually touch, which is pretty cool. Depending on what day you come through the Pensacola area there's typically stuff going on downtown and all, hit me up if you need a guide around here.

Will probably be stopping in Pensacola on Monday night.
Any restaurant and/or hotel recommendations?

I'm not too sure on hotels in the area, I know of one or two nice(expensive) ones that I've stayed at that were pretty sweet but other than that I'm at a loss. Restaurants are plentiful, depends on what kind of food you're looking for!

If you need a place to crash I have some minimal accommodations(depending on your situation... not sure if it's just you or family stuff or whatever).
