Homemade Mac and Cheese with Red Bell Pepper and Kale. I added the kale so I could say it's healthy?

Bandon Medium Cheese, Winco-Brand pasta, and Goat cheese. Cooked in Chicken stock.

Sauté vegetables, mix in one pot.

Dinner; done.

Honestly the only "extra" effort is a knife to cut the real cheese and vegetables. It takes probably the same level of effort.

Goat cheese is always a winner in my book. No hate for the kale (though I truly despise raw kale). What is up with the red bell peppers though? Looks like you used maybe 1/8th of a whole RBP. Why bother unless it was left over? Overall, looks very tasty.

My favorite take on Mac 'N Cheese is a cheddar and cream sauce with sauteed jalapeno, onion, and garlic, a little pancetta, and chunks of mozzarella over penne rigate. It's so good you don't know whether to eat it or to rub it on your balls.

Said kale was tossed in the Olive oil with the whole red bell pepper. This pot is about 3 or 4 inches deep. I only had one left...

That sounds awesome, but I can't bring myself to the state of mind where I'm ok with babysitting a sauce. This is just throwing shit in a pot of noodles.

Oh, looked like you just had a shallow skillet at first glance there, guess I should pay more attention. You can't beat simplicity if its just for your self, but if you're aiming to please, a cheese sauce is really easy, I promise. Hell, one option I've been considering is upping the ante with a beer and cheese sauce for my macaroni.

What I'm thinking of doing is making a rue, adding a heavy beer (maybe a high gravity IPA, not quite Guinness levels of flavor) stir in some shredded white cheddar, and melt. Cook up some crispy bacon and then saute some carrot, red onion, and habenero in the bacon grease. Add the veggies to the sauce, serve over Rotini with a sprig of Italian Parsley and the crispy bacon on top to spruce it up.

I may be spoiled from working in a restaurant kitchen, but what's really spoiling if you come out of it with a passion for cooking?

Late to the party, but holy crap, that looks good.

(I'd pick out the kale, though. Healthy, schmelthy! Cheese is dairy and that's good for you, right?)
