Because current Lambos are just so far away from their original elegance.
In this case you are looking at the stunning Touring bodied Lamborghini Flying Star Concept. It is based on a Lamborghini 350 GT. What a wonderful car, although it somehow reminds me of a Lancia.

Context. What seems like subdued and elegant now probably didn't back then.

This Matra was quirky looking like that.

I would argue that the first not elegant but brute Lambo was the Countach. The wedge shape was a huge step in automotive design.
The earlier cars, including the 350 GT and Flying Star Concept, had classic proportions and clean lines. That is what makes them elegant while looking dynamic.
I even see a bit of the same clean lines in the Reventon and Murcielago, but not in the Aventador, Huracan or the god awful Egoista, Veneno or Urus.

The Miura wasn't elegant, and as far as most people are concerned, that's when Lamborghini found its character. "Classic" and "elegant"? Those are just synonyms for "boring".

The Miura was elegant. Curvy, attention grabbing but not screaming.
And classic and elegant = boring? Since when? I guess you would find a CX-75 boring.
