Continuing my !!!error: Indecipherable SUB-paragraph formatting!!! , tonight I bring you the newest contender.
!!! UNKNOWN CONTENT TYPE !!!
I realized that in a few months time I will definitely need the additional trunk space, and that more often than not I'd need the aditional seats. Now the question is, do I want to make that compromise and get the more practical car, or say fuck it all and get the Z or the S2k? Any other suggestions? And yes, I've also considered a 3-series.

I know that the Mk1 IS is one of my favorite non-two seaters

The S2000 will appreciate the best. It might be a pain to live with (get a hardtop for it) but it will pay you back in time. It's cost of ownership is (and I'm not kidding about this) probably half that of the Z, which is still not very desirable. The IS300 may be cheaper to buy upright, but will be more expensive to resell.
If you cannot live without back seats or a hard top, get the Z if you can afford 2005+ (the first two years had some nasty transmission issues I think). It's as fast as the S2000 (though less fun) and faster than the IS300. It's way more practical than the S2000, and just slightly less practical than the IS300. Unless you have a family with kids, you won't miss the rear doors and the 350z has the longest wheelbase (read: largest back seat) of any Z car.
The Z also has way better upgrade potential than either car, and despite the higher entry cost, is cheaper to make high (400+) HP out of, and it can take the power better than either.
So if you're looking to save money, the S2000 is a great choice, but you'll hate driving it some days.
If you're looking for speed or fun without killing yourself, the Z is the best choice, but you'll pay more for it.
If you need, absolutely need, practicality, then the IS300 will have to do.

You could go with a G35 if you wanted something practical.

you lost me at 350z back seat. I don't know where you get your info but that is completely wrong.

EDIT: I got the 300ZX and the 350Z mixed up. The 300ZX had a back seat and long wheelbase, and you should consider it, but you're right about the 350Z, there's no back seat offered on those.
Ever sat in the back seat of a 280z 2+2? Hint, it's way smaller than this, which is the 280ZX:
So the 300ZX, which looks like this:

I would love a 280z 2+2. It'll do the job as long as there are legal back seats. Asian chicks are too small to care.

The only regretable problem with the 280Z 2+2 is the weird roofline. Not bad, and sort of reminiscent of a 1973 Skyline, but definitely not the traditional Z shape.
