DD the 350z because it's probably the most comfortable of the three, I guess. Not really happy with this decision.
Track the Mustang because with a couple grand in chassis upgrades it will be just as competent as (probablymore compentent than) the Z, but it'll cost far less to run regularly.
Burn the E36 because E36 convertibles just don't do anything for me and it's going to be the most maintenance intensive of the three.
Weird DD, T, B, for me.

The hard part here was deciding between the Z and Stang. Both are decent performance cars on a budget; the Z is better out of the box but the Mustang has a wider and more affordable range of performance parts. I'm assuming as-is stock, the Z would be a better track car.

DD and Track - Mustang GT. I won the Street Touring X class in autocross one season in a GT with just adjustable Konis, H&R springs and decent tires. Plus, backseat.
Burn the Z (too small, I owned one) and the sorority girl special.

Track the Z. The chassis is more modern, and properly independent suspension, and it is a 2-seat sports car from the get go. Lot less money required to stiffen the chassis, than to get a Fox or SN95 Mustang to a stiff-chassis baseline for the track.
Race-prep stripped, the Z is likely lighter, too, for being smaller.
SN-95 was adapted from Fox... it is 1970's era tech. The Z was designed much more recently, technology-wise, and designed to be a 2-seat performance car only. The base Mustang V6 lowest-denominator of the mustang is not that... and everything else is built on top of that baseline.
DD either the Mustang or the BMW, the mustang will be less refined but cheaper to run, the BMW will be nicer, but older, and more expensive to maintain or repair.
If you had 2 350Zs, you could track one, and daily the other, and not bother with the OLD BMW or the flexible-flyer Mustang.
If it were a S197 Mustang, the footing might be more equal. If it were Coyote V8 powered, the Mustang might have the edge, as a stick axle isn't as dis-advantaged on a nice smooth track as it is on crappy buckling street pavement.

As a 350z owner....they won't hit 60 that quickly, high fives at best. They suck to launch and want to axle hop everywhere.

The original post didn't say SVT Cobra, it said Mustang GT.
And the stock Cobra IRS needs modification to avoid wheel hop, and the rest of the chassis is still about as rigid as a wet-noodle compared to other 90's era cars.
The 350Z didn't need an IRS retrofit via an additional sub-frame. (adds weight), it was designed with it to begin with.

Ahhhhh got it. Yeah I agree with everything you said pretty much but I remember specifically those cobras having IRS. Makes sense if the OP edited his post.
The 350z also wheel hops like a motherfucker btw. But the chassis is stiff, the steering and shifter feel excellent (direct linkage) and the handling is on the good side of decent. Brakes and probably cooling could use an upgrade for the track though.

IRS on the Cobra was an improvement, but didn't change that the chassis was basically a modified 70's era platform, only a step or two up, in base form, from an economy car, by being RWD, with some sporty potential.
But I put 350Z in with Miata, and others, that were designed to be exactly what they are... 2-seat 4-wheel independent suspension cars with little or no excess wheelbase length.
Interesting that the 350Z wheel hops.. I had heard that they had tire wear and sometimes alignment problems...
Good to hear about the good aspects, too, steering, stiff chassis, direct shifting, etc...
Track model 350Zs had brembos, did they not? I would think that would be a good option... and there are good aluminum aftermarket radiators available.
I always kind of wish they had put the VK45 or VK50 V8s in the Z and G35 Coupe, even just as a special edition... Even better with a VK modified for a flat crank.

Yeah track edition 350zs have brembos. The tire feathering issue was I think only on the 03-05 models. I'm pretty sure they got it worked out, but mine is an 06 so I didn't really pay too much attention.
It would've been really cool if they'd put a vk series in the z or the g. Funnily enough a lot of people doing v8 swaps just go with the ls, which apparently fits really nicely.
