A friend invited me and like 8 other people to a Wine and Cheese party. It's actually her 21st birthday. It's supposed to be basically a collection of the most interesting people in the universe (note: I'm pretty boring myself). But I really want to take her something. Should I take a bottle of wine? What kind of wine? Thanks.

Since it's her birthday, get her a nice bottle of sparkling. If it's warm where you are, consider a sparking rose, or brut rose. A good example, if they have it would be J Vinyeards:

I'm assuming you live in the US so try these:
Seven Deadly Zin's - A old vine Zinfandel from Cali (my fav zin)
Kanonkop Kadette - Very good South African blend wine (got a spicy berry hint to it)
These are the only two I can think of by name right now (don't have my wine book infront of me) but they also have the benefit of being around $13-$15.

Yes bring a bottle as to what bottle here is how to do it. Hopefully you have a nice liquor store nearby with a good selection. At that store will be a resident wine snob that will love to make a recommendation (I swear these people get boners telling folks what wine to drink). Anyway tell the dude that you are going to a wine and cheese party and give him a budget.

I don't like wine or cheese.... Saying that, a fancy cheese and a middle shelf wine would be the way to do it. Most people will probably opt for the easy, wine option and your careful choice would get lost. Show off and find some fancy cheese to go with it.
Normally I wouldn't recommend this approach but "wine and cheese party" implies some snobbery will be involved.

Bring a crate of good beer to teach those people what human beings should drink. Vodka or some good whisky would work too. Consult this comprehensive guide to what a bloke can and can't drink for more info.

In my 20's I loved the white sweeter wines (Riesling, Gertzweiner, Ice Wines, etc.). Now (being 30) I tend to like the dry reds (Syrah, Melbec, and Petit Verdot).
Since it's a birthday, and it's going to be an occasion paired with cheese, bring a bottle of sweet bubbly (like the rose brut posted by Rad Mike) and bring a dry Chilean Melbec. Let the melbec breath a bit though before serving.
