This here is a Poncho 389, currently on sale in Sweden for 4500 SEK (650 USD). It's been sitting for 6 years (inside thankfully).
What are some of the things that I need to look out for, even though I'm planning on sending it to a machine shop for a restoration?

389 with a 2bbl manifold? Not your performance version.

You're absolutely right! But what's stopping me from putting on my 4bbl manifold on it? The heads have the casting number; 9778776, which would indicate that it is a "medium" performance engine with around 300 hp stock.

Nothing, or going with the six pack:

But then it would gulp 3 times more fuel than normal! ... But then again, it would be 3 times faster than normal also, right???
But seriously, I don't have the economy for it, those things are expensive! I'll probably be just fine with my current Edelbrock Performer RPM intake.

As I recall, the center 2bbl is primary, the front and rear are secondary's and only come in when you are pretty close to full throttle. They were pretty hard to tune, so you are probably saving yourself some headaches with your current plan. They look great though!
"I don't have the economy for it"
I'm not thinking that a 389 is going to be cheap in any respects.

Well my current smog P350 is probably on it's last legs and I'm thinking I'm gonna need to send an engine to a machine shop no matter what I do. Might aswell be a "slightly" better one.
As for the economy aspect of it, pretty much all pontiac parts fit all pontiac V8s so the price is pretty much the same no matter which block I choose to build on (I don't really have a lot of options, because Sweden). Sure would be cheaper to build a sbc, but that would also take away some of the charm of it.
