I've no connection to the place but Vatican City (technically not a country but w/e) looks pretty cool. You probably don't even need to adjust it to any scale. Just race around the thing.

Poland. It has straights and some jagged corners as well. Plus, that spike jutting out in the lower right would probably be a source of more than a couple of pile-ups. It's everything you'd want in a race track, and I'm sure even the dorifto crowd could find somewhere to break traction (i.e. the end of that straight line in the upper-right, with the long sweeping corner).
