Watched Tombstone yesterday. Love it, and Val Kilmer should have won an oscar for it, but moments of it are a little cornball. So it is relegated to my 5-10 list.
Start with the lead in pic.
Open Range (2003): Kevin Costner is Civil War veteran who wants the simple life of a free ranger, but all hell breaks loose. Long winded and slow paced, but leads up to one of if not the best shoot outs ever. One of those movies where every still shot is a work of art. Sound is incredible in this movie as well.
Sad fact: The last live action film featuring Michael Jeter.
High Noon (1952):
Gary Cooper plays a newly wed and just retired town Marshall. On his last day of work finds out an old foe is just out of prison, and on his way by the noon train to kill him. Fun fact: Features a young Lee(The Bad)Van Cleef.
The Man Who Shot Liberty Valance (1962)
Jimmy Stewart and John Wayne at their best. Largely told in flash backs, Jimmy Stewart famous for shooting Liberty Valance returns to bury his old friend. Though you see it coming from a mile away the ending is still awesome.
Fun fact: John Wayne is a bad ass.
3:10 to Yuma(2007)
I think since the Western genre is pretty much dead, when we do get one, it's freaking great. This remake is one of them. Manages to be full of action, fantastic dialogue, beautiful cinematography, and excellent sound design. Every gun shot haunts you.
Fun fact: WAAAASSSHHHHH!!!!
Destry Rides Again (1939
Again Jimmy Stewart stars in this amazing movie. A corrupt town gets a new sheriff. The famed lawman, Destry. He gets mocked by the town and the criminals for refusing to carry a gun. He's one of those infallible characters, like Superman or Captain America, who will always do the right thing at the expense of themselves or their humility . Amazingly he manages not to be corny in an era when they certainly were.
Fun Fact: Marlene Dietrich is smoking
A car for your troubles and more Marlene Dietrich.

Just a few off the top of my head.

I remember watching The Cowboys as a kid and asking my mom, "did John Wayne ever get killed in any of his movies?" Not 30 seconds later.
True Grit is great. I'm torn between new and old. I like everything about the new one more than the old except Rooster. I normally love Jeff Bridges, just not in this one. The Shootist is great, but I wish it had the books ending, where Ron Howard's character is the one to kill John Wayne's. Haven't seen Silverado or Winchester 73. The others I like a lot, just not my top 5.
I thought someone would bring up The Searchers. I just can't like that movie because of the way Captain Pike treats the Native American girl he is given. Makes me angry just thinking about it.

Have you seen Blackthorn? I hopped in to it without knowing it was the unoficial official sequal to Butch Cassidy & The Sundance Kid. Came out a few years back, and with the exception of just a few wtf takes, it's a phenomenal film in it's own right. The second part the blew my mind was the credits list. Check it out and it's quite a shocker. You'll get it when you see the credits.

Open Range doesn't get enough love so hat-tip for that; all of the others are just excellent.
Another great one is "The Assassination of Jesse James by the Coward Robert Ford"...just a beautiful film.

I'm actually rewatching Open Range right now. On a western kick after writing that. It is certainly underrated.
"The Assassination of Jesse James by the Coward Robert Ford" was a tough one to not include. My only gripes with that movie were the narration that spoiled every scene(not like I didn't know the eventual outcome), and underused soundtrack from Nick Cave and Warren Ellis. That was the main reason I watched the movie after hearing the song below. Certainly one of the most beautifully shot movies though.
