There was a Scirocco R in the states and I didn't know about it? I totally would have stolen it.

My friend drag raced the Scirocco R in Cincinnati a few months back... A Road Track journalist had it borrowed from VWOA and they raced.
He was in his twin-engined Scirocco (not a typo).

VW used one for the pike's peak hillclimb in the mid eighties.
You basically put a second engine in the rear, sync the throttles and trans linkages
and go.

So then would it essentially double your horsepower at the wheels or would one engine take more of the strain during certain points of the race?

think it just doubles the output at the wheels.
if I remember correct the VW racing engines were good for around 240hp each.
