Does anyone know anything about a green olive salad? On occasion, I go to a sub shop near where I used to work, and where I worked on the Seven at one point... One of the toppings they have is some sort of green olive relish/salad. They have a medium and a hot version, both are home-made and, of course, they won't tell me the recipe.
I'm thinking it's something Italian, they call it giardiniera, but it doesn't have green peppers, carrots, or cauliflower. It has sliced green olives, oregano, vinegar (I want to say red, not white), celery, onions, and other seasonings.
Anyone have a recipe for this? I like it a lot; when I go to the shop, I try to talk the girls at the counter to give me it in a cup; I take it home and eat it for a snack.

I think you have the name right, it is just their variation is what you like.
So take out the stuff you don't like in the recipes and your good to go. but you can buy it too. It's hard to make something that you get from shop's like that since it probably Grandma's recipe or they get it out of the bottle and don't want to tell you.

yup, his site is a bit annoying, to pre warn you it has a voice over.
But you can probably find something in your local market similar to it.
Here is another brand that you will probably see in stores Vienna like the Sausage
Giardiniera Relish from your description I think you want it more relish/diced style

Ding, ding! That looks close. I know they make it, I've talked to some of the other workers there, but it sounds like this, just not as finely chopped up.
That stuff on a chicken bacon ranch sub.... Mmmm.
