At an undisclosed location in the hills of eastern Norway, an old Toyota Cressida with a 2JZ-GE (and cleavage packing passenger) got to shred its tires in the company of some quality camera gear to make one freaking awesome drift video! I do like to see the camera car in action, nice touch.

I could probably go research this but I'd rather hear it from the "Experts" here.

When you pull the e-brake, I thought that was to start the drift. Does it actually lock up the rear wheels? If so, do you stab the clutch when you do it? Questions I have.

My understanding is that yes, it does lock up the rear wheels most of the time. And drivers do have to clutch when they e brake. It's not always just to initiate the drift either, often times it's used to extend a drift while still braking for the corner (while already sideways.)
