I'm predicting millions of votes for Eleanor. My personal favorite is the Rally Stang as well, though. I don't like it as much as the Rally 'Vette, though.

I am liking the odd-ball versions more and more.
Mustang SVO or 93 Cobra. Or most t-top Fox bodies otherwise.
I am getting more respect for resto-mod 71-73 Mustangs.
I think I would like to try my hand at a clean resto-mod 74-78 Mustang II fastback with rivet-on-style fender flares, and a simple understated paint job, and a little bit of a raked-forward stance, like an american alternative to the Nostalgic JDM scene.
I was a Mustang Fanatic for YEARS in High-school and college, and I loved the 64.5-66 fastbacks, and the 69-70 Sportsroofs, and all the usual suspects, and I still do. But they are kind of the easy choice that everybody gravitates to.

I like the resto-mod Mustang II idea. I think the car looks alright, but the power was not there at all.
I'm sure my liking the fastbacks has nothing to do with the fact my mom had a 70 fastback with the base v8 (auto) when I was born. It leaked oil from everything that had oil but she loved it and so did I.

Things have come a LONG way since the 1970s.
I am not sure whether I would go with a Turbo I4, with a volvo 16-valve head swap, or the likely easier small-block Ford crate motor. Built up with current tech, fuel injection, the works... Or there is always a Modular/Coyote motor swap option...
If the US could get the DOHC I6 engines that the australian market Fords still have access to, that would be a great choice, but not exactly plentiful on US soil.
Plus, I have this idea about grafting on the front bodywork and hood of the 71-73 Mustangs, with the full-width grille, and thin bumper.

It used to be a 67 fastback, but Nic Cage kinda soiled that one.
I think a 1971 Mach 1 fastback. They look like roadgoing missiles, the automotive equivalent of a Century Series jet — bigger and heavier and less maneouverable, thirsty as hell, but long and sharp-edged and bescooped and fast-looking in that barely-under-control way.
