... Ehh. Boring.
But at the same time, it does make a bit of a Schrodinger's Cat if you compare it to San Andreas the first - Two main antagonists with absolute power, dying either indirectly (Tenpenny) or by the protags themselves (Devin).
In Tenpenny's case, he nearly tried to get away with a stash of money and so much power in the police force he could make the city a living hell for Gangsters. Well, that came to an end when both Mother Nature and Darwin went at work - sending his commandeered firetruck off the overpass and harshly skidding down Grove Street, inflicting fatal injuries. All without a bullet or effort from the main!
Now, let's look at Devin's point of view. Here we see him tied up, in his own car, by the tree men who just happened to steal $200 millions worth of Gold. Giving their final thoughts, they coldly bid the man farewell and sent him rolling down to his watery grave.
Now, for some reason, I just can't see how this is satisfying in a way you snuffed out loose ends, and let's not get started on the technicalities - I was expecting a huge, jagged cliff face but no, all I got was a bumpy slope which shouldn't seem too fatal. And when do cars explode in a fireball, in freaking water?!
Still, I do have to applaud Rockstar for giving us two potential scenarios even if they're not directly related to one another.

To be honest, I still prefer the ending they gave us to what they did with GTA IV and Red Dead Redemption. I'm not sure sad endings have a place in games of this sort.
It sort of worked in RDR, and I understand how some felt it was necessary for the game to end like that, but I still didn't like it. Maybe it's because I never liked Jack as a character. Even his voice annoys me.
In GTA IV the ending was a failure on a different level. There is literally no incentive to pick the deal ending. Roman dies (and apart from bugging you to take him somewhere he was a pretty likeable comic relief character) and Kate hates you anyway. In the revenge ending Kate dies (and she didn't have any character anyway so it's hard to feel sorry), and Roman survives to have a happy life. Plus, you get to keep the free cab service.

While San Andreas' ending is probably better, I enjoyed V's ending a lot. The final mission, while a bit anti-climatic (not really the epic battle and/or hectic chase I was expecting), was really fun to play. I loved stealthily taking out Devin's guards, drive-by sticky bombing the Triad convoy, assassinating Steve Haines (although I would've preferred to do it more openly to hear his reaction) and scaring the shit out of Stretch before putting him down. It was a great mission, but not really a great ending mission.
As for the final scene with Devin in the trunk, I actually liked it. It was a Best Bros Forever moment, and I really fucking hated Devin. The car exploding from such a short fall was ridiculous though and having it slowly sink would've been way better.

I think the explosion was there to show you that he's definitely dead. If they only showed the car sinking for a few seconds it wouldn't be as exciting or as definite.

Well if it counts the strippers are topless, but have ridiculously low-res racks on the Xbox (I don't know how bad it is on the PS3, but it can't be much better). Wait for the PC version if you're into that stuff.

Devin was bound and gagged in a late 50s American car sinking into the ocean, only the most contrived/stupidest of plots would have him survive that. I can't come up with any examples but I know I've seen TV shows/movies pull off the trapped-in-a-slowly-sinking-car death very well (although it me quite a bit more gruesome/unsettling than a quick and painless explosive death).

What?! You beat this game already? Now what will you do with the rest of your life?

Yeah it was a nice change to have a happy ending option. You can always choose to off Michael or Trevor if you want a darker ending.
Also having Trevor's mother show up AFTER the end of the game and demand he car jack a van full of crazy meds only to disappear when he returns was better than any of the actual game endings for me.
