I've used a cell on the track once...I was the passenger though! Friend was driving, car had an engine issue and I was on the phone with a local shop to see if we could get it over there for them to take a look at, and maybe make it back for the rest of the track day. Best part was when they asked me if we had called a tow truck yet. I hadn't told them we were on the track. I said we were waiting for the safety truck to get pulled in to the pits and they started laughing hysterically.

AUGHH! NOOOOOOOOOOOOOO.
I have Harry's LapTimer for the iPuffalump. It's a very useful tool given the price point, but I had to pull in to fiddle with settings when I first got it because I couldn't STAND the beeps it made every time you finished a sector.
Luckily, I figured out how to turn off the sector beeps, but even then, it stays in the dang console where it's out of sight, out of mind. Propping it up in front of me would drive me bananas.

Unless you have an external bluetooth GPS, then you could use airplane mode.
