The Alliance Fleet didn’t have a dedicated electronic warfare aircraft (spacecraft?), surely such a thing would’ve been useful against Imperial Capital ships and TIEs right?

That’s what the droids were for, I’m pretty some of the capital or support ships could fill the role.

No, but the Rebels barely had fighters , so that’s not a big surprise though. There were recce variants of the Y-Wing and X-Wing introduced later on in the EU, but nothing comparable to an EA-6B or EF-18G.
Even the Empire lacked a dedicated ELINT ship until Rebels introduced the IGV-55 .
