Had fried turkey today for the first time. Was not impressed. Meat was dried out and overcooked, skin was decent and crispy but not much better than oven or grill.

Smoking is def. the way to go even if it’s only for an hour on the grill then finish in the oven.

I also disagree with nibs and highly recommend dry-brining the turkey overnight. Meaning take his rub, add 2 tablespoons of salt, up the sugar by a tablespoon (sugar acts same as salt in a brine and draws out moisture), rub all over turkey (under skin) then let sit overnight. Does a better job of brining than a bucket full of salt water, adds more flavor, and you don’t need a bucket full of salt water...

Whatever you do just don’t overcook the damn thing. Get a good grill thermometer. Leave it in the thickest portion touching the leg bone, and pull the bird when it reads 150 or so (should overshoot up to 160 from there).

I have never smoked a spatchcocked Turkey... would be a lot faster and better smoke penetration.

This year I am curing 2 fresh pig legs. They have been in the cure since last Wednesday and will go on the smoker tomorrow morning for a LONG day on the pit. Although the meat is cured I still take it up to 160 before pulling it.

My garage fridge died, so we have been eating out for a week....

Do notice I said no wet brine, homes. Wet brine is horrible. If you wanna dry brine, by all means. It’s another means to an end
