I know this site is all teetotalers, but y’all are my only online social group; so, I’ll ask here. My Mr. Boston handbook tells me that sweet vermouth should be stored in the fridge once opened. But my parents never did, and neither do I. I just keep it in the liquor cabinet. What is the Oppo consensus for those of you that keep a bar? Cold storage, or room temp? I’ve never noticed a big problem with RT, but maybe I’m just used to it?

Vermouth is a fortified and aromatised wine, and like other wines it will go bad once opened. If you’re planning to drink the whole bottle quickly, say in a week or so, it probably doesn’t matter. But if you want it to keep longer then it should be refrigerated, where the taste will still deteriorate but a lot more slowly. Vermouth that has gone bad is still safe to drink, but it will taste sour, like vinegar. Then again, if you’re drinking Gallo, that might actually be an improvement.

Vermouth goes bad (it’s basically wine), so you’re supposed to store it cold once opened. It’ll still go bad cold, but not as quickly. I’d say about three months max for opened Vermouth.

That’s dry vermouth, a different beast. However, I encourage you to run the experiment with whatever you have on hand.

I don’t think it’ll get you sick. It might not just taste as good as it would fresh. Just check for mold and you should be ok.

I’m making do.

This prompted some research by me though, and it turns out all vermouth should be refrigerated. I just opened this recently, so thanks for that heads up!

I have personally never refrigerated vermouth. I can see the logic that others have said in that it is in essence wine though. I use it so rarely personally that I probably should store my next bottle in the fridge.

Yet another reason I need a minifridge for bar supplies.

I still need to get around to buying a true liquor cabinet so I figure minifridge will come later. I think I’ll hit up craigslist in the spring and see if anyone graduating from one of the local universities is selling a minifridge cheap.

I’ve had some vermouths that just seem to get flat and flavorless with time and others that get distinctly sour. If nothing else, keeping it in the fridge will make your drinks colder.

I never doubt Mr. Boston and for Vermouth, the ways to retain the flavor the longest, in order are:

Purge with nitrogen and refrigerate.

Purge with nitrogen.

Refrigerate.

Don’t refrigerate.

And let’s be honest none of us are serious enough to do the first two.

The plans aren’t super ambitious. It’s just a matter of being a cheapskate and wanting to find the main piece at the right price.

Basically, I plan to build shelving into an old trunk. Something like this. The exact design will depend on the trunk I find.

Just check for mold and you should be ok.

More likely than mold would be bacteria growth, which will make it sour. That is precisely how vinegar is made. “Vinegar” is basically French for “sour wine”.

I doubt old vermouth will hurt you, but the flavor will get more and more sour over time. So drink up!
