I’m making meatloaf, and I’ll probably also prep some burgers for the week.

Frozen pizza, because I am just too tired today to make real food.

I had 2 grilled cheese sandwiches. I didnt pack anything for work...:(.. Doubted between ordering pokebowl, but figured, I have the sandwiches with me already, why spend money on take-out.

On another note: do people in Manhatten actually prepare food at home?..:P I know, its an over-generalization that I’m making here, but the few times I visited NYC (had a good friend there for a while), it seemed as if it was take-out and/or going out for dinner nearly every night.

Slow cooker pulled pork barbakoa. A copy cat recipe from cafe Rio. It’s making the house smell delicious

Despite the small kitchen, I like to cook, and do it from fresh. I can cook as well as most restaurants, and it’s cheaper. Also, Fairway is 1/2 block from us. Still, we got dim sum delivered on Friday night.

Sometimes, even though I can walk to a decent slice, a Stouffer’s French Bread Pizza (pepperoni, I add onions) is a perfect solution.

And do you do the grilled cheese w/ tomatoes and bacon inside? So good.

Its pretty straight forward. For an 8 lbs pork shoulder

Marinate over night in 3 cans of coke and 1.5 cups brown sugar

Drain off marinade, cook in 2 cans coke and 1 table spoon granulated garlic. I find its best do to low for 8 hours

Then the sauce is 2 cans coke, 2-3 cups brown sugar (depends how sweet you like it), 28 oz red enchilada cause. We also tried adding about 10 oz diced green chillies, but I think that was not needed.

Just shred the pork when its done and pour the sauce over top and done!

But, this made a ton of sauce though. I think it would be best to half everything for the sauce, unless you really like a LOT of sauce in it!

Well Steve, usually I do, but I honestly have no idea what was up with yesterday, I grilled my sandwich with the cheese melting to a perfect cheese waterfall dripping from between the middle of the sandwich, completely forgetting about the tomato and/or the bacon.

I usually make it a richly topped sandwich, but yesterday was just one of those days man.....

Remember, we’re dealing with a NYC-sized fridge here. No room to store 8 lbs of anything ... but I can cut it down and do it in a slow cooker. Thanks.
