Thanks. Although I have some days off and have a ready meal (I make sure it’s a best I can afford and properly made), I’ve come to realise that a little more time cooking can really make all the difference from having something to eat to having something enjoyable.

Lol. I’ve two digital clocks on top of my computer, one U.K./local time and the other EST. Time zones while needed really can mess with your head when there’s OPPOs on the east and west coast of America, Europe and Australia.
It’s really good. I think next time less augergine and add some beef and pork mince (a la bolognese style) or lamb mince (a la moussaka style) to add a little more protein and texture.
