Kinja'd!!!

This is pretty good stuff, but 24 years of aging tends to mellow out just about anything.

Had some people over so I opened up something from the collection I was recently given. Hadn’t gone bad yet, but needed to be drunk.

William Hill is still around a makes a ton of wine these days. I prefer their Napa Valley wines to the North Coast ones for the newer years, especially for the cabs.

My usual sparkling water. I haven’t had any wine in some time due to my never being able to finish a bottle before it went bad, but I may have found a solution. When I visited my parents recently I gave them a FoodSaver vacuum sealer. I was mentioning the other things it could do via the aux port, and my dad began to wonder if it could be used to suck the air out of a wine bottle somehow. A few minutes searching the ‘net showed that there was actually an accessory that did just that, and once I order it I shall go back to enjoying a decent wine with dinner.

I have one of these things but I got it from my parents (and I think it’s 20 years old too). It’ll keep wine fresh for a couple of days but not much longer. My rubber stoppers are a little different design so that new one may be slightly better.

Also as well as vacuuming it you can put wine in the fridge. For red just remember to take it out of the fridge at least a couple hours before serving. Whites can, and should, be served cold.

As for sparkling wine/champagne, its pretty hard to keep that for more than a few hours no matter what you do.

I have one of these, too. It’ll save my wine from oxidizing for a day or so, like you say. Worth the few bucks it cost.

4 dashes Aromatic Bitters

2 tsp Bénédictine

34 oz Sweet vermouth

34 oz Cognac

34 oz Rye Whiskey

Garnish with a cherry. I had to go to 3 liquor stores to find the bénédictine.
