My oldest daughter turns 12 today. Wife is out of town for work. I made blueberry buttermilk pancakes for the birthday girl. This was the first attempt.
I was trying to be novel and use a baking sheet on the stove top so I could make multiple cakes at once. It did not heat evenly. So I ate them, and made some more traditionally in a pan. They turned out much better.

That sheet is just too thin to heat evenly - so hot in the middle, cold on the edges.
Round 2 looks crazy delicious!

A cast iron griddle works well across two eyes, but you need to be invested in a serious pancake session to get that kind of heat and surface area going.

Its a really thick pan though. I miss my Airbake pans. Awesome for cooking evenly. Horrible for twisting and rusting.

I used to work 3rd/breakfast shift at a local chain restaurant, and would cook pancakes like no one’s business. My egg flipping skills were also top-notch.
I miss having a nice big grille to plop a shit load of pancakes (or burgers) on.

Excellent! We frequently also make breakfast for dinner. I have an electric griddle I use almost exclusively for pancakes and french toast for the reasons you cite.
You know what’s great for school lunches? PB&J sandwiches on left over blueberry pancakes.

We’ve got pans that are sort of champagne-colored with a non-stick coating that are awesome. IDK the brand though.
