Drunks. And probably nearby parents or laborers. It was pretty common for a shift lead or a supervisor to bring back 4 or 5 for their workers on busy days. When you can feed a small army for just 20$? You’ll do that all day, every day.

You really need a super hot oven to do it, but the pizza stone does a pretty good job in a conventional household oven. The main problem I have is that a normal oven will only go to like 500-550 degrees, when pizza should be cooked at somewhere around 800-900.

Aside from the physical location, it isn’t affected by being in the PNW. The place is owned and actively run by an Italian family. Back when they were tiny and more of a hole-in-the-wall grocery store, I often went there to buy pasta (and sometimes sauce). They shut down for a while to expand into some empty adjacent space, adding a large kitchen and a wood-fired brick pizza oven... So, they’re now also a source of real pizza.

They’re alright in a pinch. This place is next-level.

I have heard that there are a couple places on the other side that make similar pizzas.

Interestingly, BI just had another place open up that actually specializes in this style of pizza (Bruciato). Weird stuff for a place with just over 20k residents.

Its probably way too airy for my taste. Im such a pizza snob, if its not from a local place in NY/NJ, I wont call it pizza. Otherwise its just saucy cheese bread. But yeah I think the dough is the most important part. Although pizza I had in Italy was pretty decent too. But nothing really beats the random places on street corners in NYC.

Here in Madison there’s also a place that does Trenton NJ style which is like NY style but a slightly thicker crust and the sauce is in a spiral on top of the cheese.

I’ve always thought of NY style as more of a lunch pizza — grab a couple of slices, fold them over, and there you go. As much as I’ve been in NYC, I don’t think I’ve ever actually had pizza for dinner there.

I don’t disagree. It just never occurred to me before responding to your post that despite all my time in NY (including having a corporate apt there for many months), I never had pizza for dinner. This is even odder considering that pizza for dinner probably has been a one-night-a-week constant in my life since I can remember.
