Windows 7 wasn’t really special, it was just that 8 was an abomination and so is 10. 2000/XP were the last time they were pretty good. WS2008/7 just happened to be endurable and weren’t their successors.
Also note that 2000 & XP had completely different targets. XP was a desktop OS, which 2000 was server & workstation. They were the same underneath. XP was the first NT based desktop after they killed the earlier desktop series (ME was the final).

For real though, XP was a capable operating system which was very easy and relatively intuitive (not compared to a mac or Linux OS but, I digress), while taking up minimum operating power. XP was still conducive to do yourself repair and control. Now all the “real” control is hidden behind a shroud of idiot proofing.
