The best is getting a car wedged with the train and making the front a V.
Anything mid engined does well because the game doesn’t damage the ‘engine’ as quickly so the car last longer before blowing up

Back when my buddy and I still played GTA V, we used to spend a lot of time driving cars around and wrecking them - running into each other, high speed jumps in the mountains, crazy stunt jumps without trying to stick the landing, etc. Some of the cars will get incredibly compact while/after losing pretty much all of the body panels. It was fun.
