Kinja'd!!!

I made linguini with asparagus and pine nuts in a butter/garlic/lemon sauce with a fried egg on top. Mangia!

That’s interesting. Why the egg? Is it so the yolk makes a kind of sauce when you break it, or did you just feel like an egg?

I have chicken, peanut sauce, onions, peppers, rice... So all that thrown together or something

The yolk makes a bit of a sauce and mixes well with the garlic and butter. Adds some protein as well. A lot of traditional Italian dishes incorporate an egg on top. They aren’t used too frequently in Italian-American dishes. I once had a pizza in Mira (outside of Venice) that had white asparagus with egg yolk on top. That’s kind of where I got the idea for it.

Funny, the only time I remember seeing an egg on top of something was at Mexican restaurants. Still, a good idea.

Just finished! A few thick slices of ham, five eggs fried over hard(ish) and assorted veggies. Cast iron ftw. Plus tomatoes, although I’ll always think of them as veggies no matter what anyone says

No but I had mac and cheese on the side and dipped them in BBQ sauce. I also made some frozen corn in an attempt to salvage some illusion of healthiness. My 4 year old son actually ate dinner for once which is all that really counts.

Right there with you on getting four year-olds to eat. I was preparing for a battle with this meal, but both my kids gobbled it up. Go figure.
