Kinja'd!!!

So I pulled over for lunch and ordered a burger at some place with food. It was some variation of western burger with the BBQ sauce, bacon, and a fried onion ring. One bite in and I could distinctly tell something was wrong with what I was tasting. Upon inspection, the breading of the onion ring hell a terrible truth: it was a partially-cooked, thick, red onion inside.

Onion rings on a burgers should be yellow or colossal sweets. The sort of unmistakable... “veggieness” taste of a red onion can not be masked by some fried breading. Nor do red onions carmelize like a sweet onion. There’s also something overpowering about a red onion in a way that a cooked sweet onion is not. My whole burger just tasted like red onion, even once removed.

Seemed like a lousy cost-cutting decision (they already throw cut red onions on any burger at the same place). I have NEVER in my life seen a fried red onion on a burger.

I don’t mind a subtle onion flavor, but if it gets too strong it tastes like body odor. And having a whole onion anywhere near my dish is too much.

That’s gross and wrong. I think I’d send it back — I’m ok with white and yellow onions but I just can’t stand red onions.

There is ZERO sweetness to a red onion! It cannot be used in place of good honest hard working sweet onions.

I’m trying to imagine someone doing that, and I can’t even. I’ve actually been known to put red onions on a burger in some circumstances. But never in an onion ring.

The best local burgers I’ve ever had were from a biker bar called the Red Onion Lounge. They made a green chili burger which was amazing. Obviously they all came with red onions. Red onions are great on burgers, but they shouldn’t be cooked. They’re best raw. I’ve never seen someone fry a red onion. That’s gross.

Man, it’s too bad we live in a veritable fast food wasteland. Carl’s Jr. makes about the best variant of this anywhere, but the only one I know of near here is all the way in deepest, darkest, way-too-far-removed-from-the-freeway Renton.

Let me edumacate you on some onions.

Yes, red onions are bad candidates for onion rings, but not because of why you think.

Onions have three main properties that determine what they should be used for: sulphur (bitterness/sharpness), sugar, and fiber.

Sweet onions are not higher in sugar. They are lower in sulphur. They are actually also lower in sugar. They’re also lower in fiber. Basically they’re the least onion-y onion.

No onion caramelizes when fully encased in fried batter. They basically steam within the batter. Sweet onions are good for onion rings because their fiber content allows them to break down while frying encased in batter, and their low sulphur content allows them to have a milder flavor.

But otherwise, sweet onions are goddamn worthless abominations upon onion-hood. They’re ok to put on a salad if you want a little bit of onion-y ness but I hate raw onions on salad. They’re just crap. Green onions on a salad, if you must make it onion-y.

Sweet onions are the worst onions to use for caramelized onions, because of their low sugar content. You need more sugar to get that deep brown caramelization. Good old regular yellow onions are much better than sweet onions for this purpose.

Red onions have higher sulphur and fiber which means they are more bitter and take longer to break down while cooking. This is what makes them bad for onion rings.

Red onions are best used when you want a nice bracing raw onion to cut through something particularly fatty and meaty, like say a big thick burger with high grade beef that’s not cooked all the way through. I love a burger with just cheese, ketchup, mustard, red onions, and pickles.

Raw or undercooked red onions can easily overpower dishes because of their high sulphur content. The golden rule is red onions play nice with fat. Lots of fat.

You can still caramelize red onions with enough time because they still have plenty of sugar in them. You just need to break down the fiber.

A shallot is a mini red onion that is lower in sulphur and fiber than other red onions. The shallot is the best onion to use raw in salads (if you like raw onion in salads—I don’t) and my personal favorite for using raw on tacos or in guacamole. Very versatile.

Onions. They’re important!
