I actually brought lunch, but couldn’t pass up on a free UberEATS coupon, so got appetizers and dessert to make it a full course.

Home made beef-enoki rolls on rice, Mango Salad and Mango Sticky Rice.

I had a protein shake and an apple, then I’m going for a trail run. But just so you don’t think I’m a freak, I will promptly come home and binge on 2-3 servings of Mushu Pork from my favorite greasy spoon Chinese place.

Currently eating a late breakfast (best coast time) of steal cut oats mixed with chocolate protein powder. I forgot my banana for the oats and the delicious baked ziti I made last night so I’ll prob just grab a sandwich from Togo’s.

What I would recommend is make some teriyaki or black peppercorn sauce to top it up. I usually do that but I just got lazy and came out a bit dry after the microwave.

Simple as corn starch + soy sauce + peppercorns + sugar.

I really like this recipe for an asian-y beef thing. I add more veggies than just snow peas though and I’ve also used flank steak when skirt wasn’t available. Could easily do the beef from that and wrap it around the enokis.

Skirt or flank is a bit too chewy, generally for rolls you use shabu-shabu hotpot cuts, which is usually ribeye or sirloin cut razor thin. Sauce from that recipe would work though.

And instead of enoki, there’s another variant I’ve seen involving fried minced garlic and spring onions, very common with teppanyaki.

I was thinking that recipe because the baking soda in the marinade does a quick tenderize on the meat. It ends up nice and not chewy, especially with skirt.

I’m generally not a fan of the baking soda as a tenderizer.

The bitter aftertaste kinda ruins the flavour, and I’ve only seen Chinese restaurants do that to tenderize low quality beef. In Hong Kong we never use that at home.

I was skeptical the first time I made it with the baking soda for that reason. I think because it’s such a small amount in this recipe, and because oyster sauce is pretty heavy, that you don’t notice the taste.

Omitting the baking soda and letting the meat marinate for longer would probably also work.
