Yeah, this is the first truly repulsive thing I’ve learned about him. Most of it was excusable for some reason or other, but this one isn’t. You don’t ruin a good steak by turning it into shoe leather, then you definitely don’t eat it with ketchup.

Red wine reductions are acceptable.
a great many butter based sauces, especially pan sauces using fungi and/or allium (e.g. onions, shallots, garlic) are acceptable.
HP, A1, and ketchup are blasphemous. Fact: These condiments do not improve steak. This is not an opinion, and you are not allowed ‘alternative facts.’

I prefer steak without sauce but I do like to use Montreal steak spice in lieu of plain salt and pepper.
That said, I have had steaks with chimichurri and I really like that.
Ketchup is a no-no, though.

My beloved La Victoria has gone downhill, but it’s still so much better (I grew up a few blocks from their plant in Los Angeles, so I remember the smell floating through the area some days).
