that’s a good day!
Wife and I go to a local coffee shop for breakfast pretty regularly. We sit at the bar and chat with the workers. Barista dude was telling us that an espresso shot needs to be poured within 15 seconds of it being made. I jokingly timed him yesterday as he made a shot for me and it ended up at 20 seconds, he made me another under 10 seconds to prove a point...I was flying

Starbucks has a drink called the flat white, it is also a triple but they pull a quad and will gladly give you the extra shot all the espresso.....

Yes - I also googled it, but it got real involved real fast for my knowledge of coffee.
More or less temperature change and oxidation occur as the espresso is exposed to the air. It needs to be moved to something else before it goes “bad.” Though that’s kind of subjective on what bad is. For me, my first shot that took 20 seconds tasted as good as the short I took that was poured within 10 seconds.

I like the flat white, but it’s a shit ton of caffeine. It’s a bit hard to take without food.
