THREE. Because each piece of cheese covers 2/3 of the bread. In order to get a full double layer of cheese, you need 3 actual slices.

(I may or may not have eaten tomato soup and grilled cheese for dinner 4 times in the past week).

Too much cheese. I off set the slices. On one half the slice is on the side of the bread, vise versa on the other side.

The correct answer is a mix of cheddar, gruyere and maybe a little fontina, shredded and mixed together before applying to the toast. Furthermore, the sandwich should be made with real butter (local, if you can get it). And just before applying the top slice of toast and flipping the sammy, add some thinly sliced, ripe, chilled salad tomato slices.

I usually do 1 slice sharp cheddar, 1 slice mozzarella, & some Parmesan. With salted butter. I put both bread slices butter side down, then one the cheese is melted I flip on side over and remove from the pan.

A good grilled cheese is well worth the effort.

But I’m also lazy. I’ll usually settle for just the sharp cheddar and tomato slices. With real (yummy) local butter. :)
