I, too, thought that this was pure genius. Like you, I’d be concerned about the plating melting off and ending up in the food. Crank up the heat ultra high and burn it off, or keep it low and cook slower. It’s not like you’re going to keep the same cart around to use again, although I may be wrong and that may be part of the redneck lifestyle.
